Early Life Mrs. Eunice MofunOluwake Omotoyosi Akanbi was born in Inisha-Ejigbo, Nigeria on October 1st, 1952. Her parents were Joseph Olaniyan Olowude and Mosobalaje Odebunmi Olowude. Her mother died of unknown illness when she was in her early teens, and she was raised by loving grandparents. She credits her grandparents for her moral integrity, work ethic, and generosity. Education She attended high school in Ilorin, and she received her Teacher Certification at the Teacher’s Training College. After her marriage on December 28th, 1974, she relocated to the United States with her family. At the University of Missouri, Columbia, she completed her Bachelor’s Degree and her Master’s Degree in Extension Education, with a focus in Foods and Nutrition. Professional She then returned to Nigeria where she worked for the Ministry of Education. She conducted research into the use of soybeans as a nutritional supplement to the Nigerian food industry. During her teaching career in Nigeria, she co-authored three textbooks on Home Management, Clothing/Textiles, and Foods and Nutrition (Home Economics for Junior Secondary Schools-Books 1,2, and 3), all of which are still in use among junior high schools across Nigeria. Throughout her life, she has been the president of a scripture union, a choir mistress, and a Sunday school teacher. She established a daycare and an early childhood education center. Her entrepreneurial spirit spurred her to develop her own wedding cake decorating business in addition to selling homemade goods through market vendors in her area. Family, Faith, and Perseverance Eunice was dedicated to giving of herself in order to improve the lives of her children and family. She returned to the United States of America and settled in Cincinnati, Ohio with her family. Here, she was very active as a member of the Nigerian Women’s Eagles Club in Cincinnati, Ohio and was a devoted church and choir member. She worked in the Quality Control department at Krogers Foods, she was an educator, and also a certified cosmetologist. She was a few weeks away from completing her Associates Degree in Medical Assisting and Pharmacy Technician when she had a stroke, and was wheelchair bound. Determined not to let the stroke keep her down, she worked hard, learned to walk again and was on her feet, less than a year later! She would tell you that her faith and the upcoming birth of her first grandchild, gave her the strength to make her remarkable recovery. Eunice was a born-again covenant child of God who continually dedicated her life and all that she had to Him. She is survived by her husband, Joseph, her three children, Adebola, Olanike, and Opeyemi, and her grandchildren, Naomi, Anjolaoluwa, and Noelle.
